Recipe for busy parents from Theo Michaels!

Many of you have no doubt heard of local chef Theo Michaels who made it to the semi-finals in Series 10 of Masterchef in 2014 and now runs a pop-up restaurant and offers a private dining service here in Harpenden.

He also regularly blogs on his own site www.theocooks.com, including video recipes, and we are delighted that he is giving Mum's guide fans and followers an exclusive first look at his latest video, which is aimed at busy parents with hungry children to feed: "3 minute Provence Peas & Salmon". Theo himself says "it's one of my favourite kitchen cheats for when my two kids are starving and I need to make something healthy, delicious and really quick!"

3 minute Provence Peas & Salmon by Theo Michaels
 
Ingredients (serves 1):
1/2 tin Marrowfat Peas
1/4 courgette diced into .5inch squares
3 baby plum tomatoes cut into quarters
1/2 clove garlic - finely sliced
Squeeze fresh lemon juice
2 tablespoons chopped fresh herbs (parsley, coriander, basil, etc. work well)
1 small fillet of salmon (skinned)
1 green chilli chopped
Seasoning
Few glugs good quality extra virgin olive oil
 
Method:
In a bowl, add the 1/2 tin marrowfat peas (including about 1/2 of the juice), courgette, tomatoes, garlic, herbs and garlic.
 
If cooking this for adults; add the chilli and seasoning, if just for the kids you probably want to leave the chilli out!
 
Once mixed together, place the fillet of salmon on top of the vegetables, spoon some of the juice over the top of the salmon and then cheat!
 
Cover with clingfilm (pierce with fork a couple of times) and pop into the microwave for exactly 3 minutes. Once done, taste and add the squeeze of lemon.
 
Done!
