Simple Tomato Sauce



I love this pasta sauce and I find it a real hit with my kids and their friends.  It is quick and easy to prepare, using store cupboard ingredients, and is healthy and nutritious too.  It is my go to recipe when I have had a busy day, time is short and I’m tempted to just grab a pizza out of the freezer!!

Serves 4

  • Oil
  • 1 onion (finely chopped)
  • 2 garlic cloves (crushed)
  • 1 glass of red wine
  • 2 x 400g tins of chopped tomatoes
  • 1 teaspoon of sugar
  • 2 teaspoons of mixed herbs
  • Salt and pepper
  1. Heat the oil in a pan.
  2. Add the onion and soften for about 5 minutes; add the garlic and cook for a further 2 minutes (do not allow to burn)
  3. Add the wine and allow to bubble for 2-3 minutes
  4. Add the chopped tomatoes, herbs and sugar – taste and season as necessary
  5. Simmer for 10 minutes
  6. Serve over your favourite pasta (we like it with spaghetti) with a generous sprinkling of parmesan
