Perfect Picnic Tortilla



Delicious served hot or cold…as a main or a tasty snack.  A tortilla is an ideal addition to a summer picnic…tastier than sandwiches and a welcome change!


  • Oil
  • Medium sized potato (peeled and thinly sliced)
  • Red onion (peeled, halved and thinly sliced)
  • 100g asparagus tips (sliced)
  • 6 eggs
  • Seasoning


  1. Heat the oil in a large frying pan; add the onions and potatoes and cook on low for 20 minutes. Gently turn so they brown on both sides
  2. Add the asparagus tips, put a lid on and steam for 5 minutes
  3. Crack the eggs into a mixing bowl, season with a pinch of sea salt and some freshly cracked black pepper, then whisk together with a fork
  4. Remove the lid from the frying pan and pour over the eggs
  5. Cook over a low heat until there’s almost no runny egg on top (15 – 20 minutes)
  6. Loosen the sides of the tortilla and carefully flip the pan over a dinner plate and tip it out. Slide it back into the pan the other way up and cook for another 5 minutes
  7. Turn out the tortilla and cut into pieces
