Perfect Picnic Tortilla

by

Published:

Delicious served hot or cold…as a main or a tasty snack.  A tortilla is an ideal addition to a summer picnic…tastier than sandwiches and a welcome change!

Ingredients:

  • Oil
  • Medium sized potato (peeled and thinly sliced)
  • Red onion (peeled, halved and thinly sliced)
  • 100g asparagus tips (sliced)
  • 6 eggs
  • Seasoning

Method:

  1. Heat the oil in a large frying pan; add the onions and potatoes and cook on low for 20 minutes. Gently turn so they brown on both sides
  2. Add the asparagus tips, put a lid on and steam for 5 minutes
  3. Crack the eggs into a mixing bowl, season with a pinch of sea salt and some freshly cracked black pepper, then whisk together with a fork
  4. Remove the lid from the frying pan and pour over the eggs
  5. Cook over a low heat until there’s almost no runny egg on top (15 – 20 minutes)
  6. Loosen the sides of the tortilla and carefully flip the pan over a dinner plate and tip it out. Slide it back into the pan the other way up and cook for another 5 minutes
  7. Turn out the tortilla and cut into pieces

About the author

Fostering a love, appreciation and understanding of good food, starts at home. I prepare the majority of meals from scratch and always tell my children what is in a dish (there are no hidden vegetables here!) I love experimenting in the kitchen, so our meals are varied and interesting and the children are often presented with something they have never seen before. But they see that as exciting and eagerly dig in – and, most of the time, they really do enjoy it! I would love to be able to inspire others and share my love and knowledge of food, so I’ve started documenting my food journey on Facebook (@deliciousandreal), Twitter (@deliciousreal16) and Instagram (@deliciousandreal.) It’s all real food cooked by me and shared with my family and friends. Take a look and try something new, you never know, you might like it! www.facebook.com/deliciousandreal/
